How to make an Omelet without a recipe


Some meals can be very simple.  So simple that they really don't need a recipe.  Often, it is your technique that determines your success.  An omelet is one of those simply wonderful dishes that can take so many different forms.


Begin with a few eggs, milk, salt and pepper.  Add whatever you have handy.  Today, I have the last of the summer tomatoes, a yellow pepper and sharp cheddar cheese.  Mushrooms and onions can often be found in the kitchen...just not today.  Perhaps you have some left over chicken, ham or even pepperoni.  Throw that in too.


Begin by preparing your filling.  Chop up vegetables, cheese or anything else you plan to include.  In a separate bowl, whisk together eggs and milk, adding salt and pepper to taste.  Now, make your omelet.

Preparing an omelet is more amount technique than ingredients.  Ensuring you have a non sticking pan is crucial.  Use more oil or butter if needed.

2 or 3 large eggs
2 Tablespoons milk
Salt and Pepper to taste
Butter or Oil for pan (optional)

Filling
Cut up vegetables of your liking
Cut up meats of your liking

In a small bowl, whisk eggs with milk.  Season, to taste, with salt and pepper.

Heat a non-stick pan (or use a small amount of oil or butter to coat pan), pour in the egg mixture.  Cook, undisturbed for about 30 seconds, then use a spatula to push the edges of the eggs toward the center.  After you do this, tip the pan to allow uncooked egg in center to move to edges.

Continue doing this until the omelet is still moist but no longer runny, about 3 minutes.  If adding filling, spread (cheese, tomatoes, etc.) evenly over top.

Using a large spatula, fold the omelet in half and place on a plate.  Sprinkle remaining filling items on top.

After some practice (and depending on ingredients) you will know how long you need to continue cooking after adding toppings.

Variations include sautéing ingredients like mushrooms, onions, peppers, etc. prior to cooking omelet.


Note:  this is one of the first dishes my kids learned how to make for themselves.  My son in quite masterful at making his own omelets now.  Gives me some peace of mind knowing that they have the ability to keep themselves well fed.
